This unique, limited release wine is a blend of Pinot and Chardonnay fermented by wild yeast in a carbonic maceration style. This is done by letting the fruit stay as whole bunches to ferment in the berries under a CO2 rich environment for approx. 6 weeks. A small amount of Gewürztraminer is part of the blend to enhance aromatics
Pressed to very old oak, on lees, with no SO2 until bottling.
Grilled nuts, apple and musk spice dominate the aromatics. Flavours are of baked apple and strawberry with a creamy nutty texture. There is a small amount of tannin which comes from the time on skins. It’s like a cross between a rose and a red wine.
