Whole bunch Pinot Noir (60%) and Syrah (40%) fermented with wild yeast using the carbonic maceration technique. This is done by letting the fruit ferment in the berries under a CO2 rich environment for approx. 6 weeks. Matured in very old large format oak on full lees; bottled un-fined and unfiltered.
Intense Plum and ripe strawberry fruits with Indian spice and cool herbs. The palate is juicy and round with stewed strawberries and dark cherry. The wine looks more Pinot to smell, but Syrah to taste. Finishes with fine sappy tannins.
