Simon makes two ‘cru’ or unique expressions of Sancerre in the form of Les Cris and Racines. Wine comes from One plot in the estate which is mostly clay underneath with small limestone on top. The grapes are of course hand picked, pressed then after a very, very light racking (no pumps) it’s put into Acacia barrels with most of the lees and fermented. He uses Acacia barrels as this wood simply allows wine to ‘breath’ (technical word is micro-oxygenation) without impacting lots of the flavours you get from oak (spice, vanilla, toast etc). No battonage (lees stirring) either. 10 months in these barrels before bottling, no malolactic. This wine is all about allowing this amazing spot of vines to express its intense floral notes. Simon suggests to either decant this wine or open 2 to 3 hours before tasting.
Simon Chotard is the great revelation of Sancerre on the last four vintages. Out first of the class of school oenology from Toulouse, he gives to wines of the family domain wines a precision and a depth praiseworthy.
